Mexican {Unloaded} Baked Potato

Your typical potato is either plain & boring or it’s loaded with sour cream, butter, cheese, bacon, and everything bad for your health (I get it, it taste good)…But remember… every time you eat, you are either feeding a disease or fighting it. This potato is everything delicious & healthy … it’s {unloaded}…no “bad” fat, meat, or dairy.

|Continue rant| Potatoes are great – you don’t really have to talk them up too much, but I have a few things to say about them. You see, many of us are on a budget, it’s just one of those things that happens when you hit adulthood – you suddenly realize “wow, life is actually super expensive; especially without Mom and Dad helping out anymore…” Am I right? My husband has been on his own financially for about ten years now, and I’ve been on my own for almost three (my husband is 30 and I am almost 25). We’ve done pretty well for ourselves, but that doesn’t mean life is always peachy or easy. We have bills; a mortgage, car payments, utilities, groceries tabs, gas, prescriptions, and so on… The list is endless. So when it comes to pinching pennies and eating healthy on budget, I highly suggest visiting your local Costco or Sam’s Club and picking up a big bag of Organic Russet &/or Sweet potatoes. We buy both. At 79 cents per pound, you just can’t beat it…! Any kind of potato can be dressed up with just about anything – so we decided to try a Mexican version first…  and it was the bomb. Peanut Butter Cups with Hawaiian Sea Salt

The healthier version of your classic Reese’s Peanut Butter Cup…Made with some of Nature’s finest; almonds, cashews, dates, and little bit of coconut oil. Now, I can’t promise you these are low in fat, but they are certainly loaded with healthy fats! And let’s not forget the cocoa…(the most important part in my opinion!) They are perfect for kids, a pre-workout snack, or simply as dessert. They are a huge hit in my family and I hope they will be in yours too.

Ramen with Homemade Seaweed Broth

Remember the good ol’ days of eating Top Ramen? I certainly do. There is just something about those noodles… the texture is firm but also kinda slippery, right?  Well, my most recent discovery were these wonderful gluten-free ramen cakes made by King Soba…and let me tell you, they are nearly IDENTICAL to Top Ramen noodles! (I am so excited about these right now!) But wait, more good news, they are 100% organic, gluten-free, and vegan.  #spreadthelove King Soba, thank you!
