This ooey, gooey, cheesy sauce can be the base to so many of your favorite meals; macaroni & cheese, nacho cheese, queso dip, green bean casserole, and/or simply eaten plain! The base of this sauce is just carrots, potatoes, and yellow onion — that’s it! You can also add soaked cashews for an extra creamy affect and some healthy fat.
